- 2 oz london dry gin (or botanical gin if you are feeling frisky)
- 1 oz Horball’s Peach Rosemary drinking vinegar
- 1/4 oz lemon juice
- 1/4 oz simple syrup
- 2 oz Champagne

Combine gin, lemon juice, and simple syrup in a cocktail shaker. Fill shaker with ice, cover, and shake vigorously until the outside of the shaker is very cold, about 20 seconds. Strain into a champagne flute and top off with champagne. Add a lemon twist for garnish.
